T Magazine: A Bite of Bogotá

The northern section of Bogotá, Colombia, is already home to many of the city's poshest residences. Now, hip (chévere in the local lingo) eateries are popping up practically on top of one another. Just this year, the restaurateurs Maurizio Mancini and Gerónimo Basile of the Chinese cantina Kong opened up two more spots: Magnolio (Calle 69A No. 5-19; 011-57-1 -211-0627; entrees $17 to $27), a 1950s-themed restaurant in a three-floor house (with a V.I.P. room done up as a library) that serves comfort food with French and Spanish influences; and N. N. (Calle 71 No. 5-65; entrees $16 to $33), a two-month-old speakeasy with knockout small plates — try the banana croquettes stuffed with rabbit.

Nearby is a new farm-to-table restaurant called Mercado (Calle 93A No. 12- 73; 011-57-1-236-2500; entrees $8 to $15 ). Opened in July by the beloved local chef Leonor Espinosa, it prides itself on all-organic Colombian cuisine. There's an exotic array of sparkling juices — strawberry, passion fruit and mandarin — as well as panna cotta with guava spread and nutty caramel-like arequipe.

A short ride up Calle de los Anticuarios takes you to El Bandido Bistro (Calle 79B No. 7-12; 011-57-311-472-2327; entrees $12 to $20). The French menu somehow works with the secondhand furniture and vintage Argentine knickknacks. The male-only waitstaff dress as bandits with custom-made caps and leather aprons. This place is not easy to find: it's tightly nestled at the end of a winding road full of private homes, antiques shops and churches. But in true Colombian fashion (most every dinner seems to devolve into a rumba) you can track it down by the sound: a jazz band plays Caribbean-inflected doo-wop until dawn. And if you still need a nightcap, consider the local rum, Ron Viejo de Caldas, or a shot of aguardiente ("fire water") at the rooftop bar of Colombia's first Design Hotel, The B.O.G Hotel (Carrera 11 No. 86-74; 011-57-1-639-9999; boghotel.com; doubles from $290), which opened this spring. Offering 55 rooms, a spa and a restaurant by Espinosa, it drew inspiration from Bogotá's Museo del Oro for its gold, bronze and emerald-colored interiors.

This post has been revised to reflect the following correction:

Correction: November 8, 2012

A previous version of this article had incorrectly placed the captions for Mercado and Magnolio. Mercado is the restaurant on the left, and Magnolio is one on the right.
