English countryside hotels have sometimes had a reputation for being overly formal and stuffy, but that may change with several new properties that can be described as laid-back. The trend started in 2009 with the opening of Lime Wood (rates from £255 a night, about $428), a 29-room 18th-century hunting lodge turned upscale getaway in Hampshire, about 90 minutes southwest of London. Instead of the antique décor typical of country retreats, the furnishings are contemporary and eclectic with touches like free-standing bathtubs in the middle of guest rooms. The hotel welcomes travelers in jeans and has a 20,000-square-foot spa and an Italian restaurant with its own smokehouse.
Lime Wood's owners have also opened the Pig Hotels (rates from £139/$233), a chain of shabby-chic properties in Hampshire, Bath and Southampton and one scheduled to open soon in Dorset, where gastronomy is the highlight. Each has its own garden, and all the ingredients at the restaurants come from within 20 miles of the hotels. The décor includes mismatched garden-inspired fabrics in the guest rooms and terra-cotta pots and baskets of vegetables in the public spaces. "We want to give guests great food and service but do it in an unpretentious way," said the founder and co-owner Robin Hutson.
The 12-room Wild Rabbit (from £95/$159) in the Cotswolds is another new informal hotel. It has a pub with a fireplace and exposed brick walls, light wood floors and muted tones throughout. And the 70-room Coworth Park (starting at £285/$478) in Berkshire is a relaxed hotel that's also family friendly with activities like horseback riding and chocolate making.
