Two trends — learning vacations and nostalgia for good old-fashioned Americana — come together at one resort this fall. Paws Up in western Montana is kicking off its first pie camp Oct. 11 to Oct. 14.
Kate McDermott, a baker who teaches Art of the Pie classes at her home in Port Angeles, Wash., will lead the "Upper Crust" camp, offering demonstrations and hands-on sessions in crust making and pie filling. Guests will make both seasonal huckleberry dessert pies and savory game pot pies, between optional outdoor excursions including horseback riding, fly fishing, ATV touring and mountain biking on the 37,000-acre property.
Pie school tackles what Ms. McDermott considers the No. 1 obstacle, fear of pastry. "The key is to keep all your ingredients chilled," she said. "Actually, I always say keep everything chilled, especially yourself."
The camp itinerary also includes a seminar in food photography, a pie-eating contest to name the most ingredients in a slice and multicourse dinners by executive chef Ben Jones and Dale Levitski, the resident guest chef. All-inclusive tuition for two costs $5,361.
